Recipe: Cheese Sandwich

Take some milk. Goat or cow milk is fine.

Separate the milk into curds and whey with rennet. You might as well just buy the rennet.

Pass the sludge through a cheesecloth. Keep the curds, throw the rest a whey.

Add some salt. Press the cheese. Press it again. Cut into pieces. Does it look like cheese? O.K, close enough.

Procure some wheat. Grind the wheat into flour. Add water and yeast. Squash. Yes, just buy the yeast. You now have some dough.

Put the dough in a metal pan that you have made, earlier. Bake until the bread is baked to your taste.

Slice bread and cheese into suitable shapes and volumes. Use a knife, if you are allowed to. Assemble.

No, don't worry about butter. It's too much trouble.

Serve on a plate with a cup of liquid.

Oh, by the way, don't make this recipe if you don't like cheese or bread.

No butter on mine. Not allowed to handle a knife, but I can use wire cheese slicer and spoon split the bread.

I got a really great recipe for PB&J sandwich just last week.

17 months ago: I'm still working on the pan. Another fifty feet or so to reach the iron ore. Tried a wooden pan, and one made from some honeycomb, didn't work out though.

I had a friend that was a cheesemaker...he and his wife made the famous Reedsport Cheddar. I saw it for sale in France and it was something like $23 lb.

That cheese factory closed and those 100's of thousands of pounds of cheddar just sat in there aging for years. The coolers were driven by an aged ammonia refrigeration system that the cheesemaker kept running (he was an outstanding refrigeration engineer and my partner in a quite successful refrigeration business)

I love canning and baking, cooking and barbecuing...we do all our own here, no processed food.
